Working with new clients can be tricky when everything happens behind a screen. What do you do to build trust early on?

Do you rely on past work, reviews, recommendations, contracts, or something else?

I usually do a demo first if the client asks me which helps build trust right away. They can see my work quality before committing to anything big. I also share portfolio examples and if I have testimonials from previous clients those help a lot..
I over deliver. :D
I always try to do more than what I originally promised. This strategy has worked for me when I was very active on Upwork, and it is still working for me when I mostly use forum marketplaces to find jobs. I have a couple of clients who have been hiring me for more than a year.
In my view, clear communication from the beginning is crucial. I ensure that all expectations are realistic expectations to keep clients informed consistently and meet deadlines. While a strong portfolio is beneficial, the effective way to gain trust is by being prompt and professional.

The first thing I do is to show them my past jobs. I also make sure to share the feedback from people that worked with me and I try to respond to their queries very fast. I also notice that when you communicate clearly, it gradually build with your clients.

What I like to do is showcase some of my past work. I also like to offer a first order discount, everyone likes a good discount of course! I also always make sure to keep in touch with my clients and let them know where I'm at on their request. You never want to keep your clients in the dark, even if you run into problems you should be upfront with your clients.
